Bus Boy to Big Table: What 20 Years in the Restaurant Trenches Taught Me

The Floor Doesn't Lie

When you start at the absolute bottom of a restaurant — wiping down laminate booths, scraping melted cheese off plates, carrying fifty-pound bus tubs down grease-slick ramps — you learn something business schools will never teach you.

You learn that hospitality isn't a strategy. It's humility in motion. The dining room floor is a truth detector. Customers smell pretense a mile away, and employees know within thirty seconds whether their leadership respects their back-breaking labor.

In my upcoming book, 'Bus Boy to Big Table', I share the unvarnished stories from those early years — the 16-hour doubles, the missed paychecks, and the relentless desire to earn a seat at the table where real decisions were made.

From Wiping Crumbs to Writing Checks

A lot of consultants want to talk to you about restaurant operations from 30,000 feet. They have spreadsheets, fancy acronyms, and zero calluses on their hands. I can't do that.

I've worked the line when the ticket machine wouldn't stop printing. I've been the dishwasher when three guys didn't show up on a Saturday night. I've bought restaurants with owner financing at 21 years old and stared at bank statements that made my stomach turn into knots.

Every lesson in 'Bus Boy to Big Table' was paid for with sweat, sleepless nights, and real capital.

The Big Table Isn't About Power

People ask me what the 'Big Table' represents. Most think it means making millions, rubbing shoulders with industry titans, or owning an empire. But to me, the Big Table is about generosity and stewardship.

It's about having enough room at the table to pull up chairs for the people who helped you get there. It's about mentoring the 19-year-old dishwasher who has a dream to open his own food truck. That's why I'm telling this story.

Spring 2027

'Bus Boy to Big Table' releases in Spring 2027. If you've ever started from nothing, fought through doubts, and worked your way up shift by shift, this book is written for you.
